All of the meats and all of the sauces are amazing on their own but together they create BBQ perfection. The Low Country Mustard BBQ Sauce enhanced the smoked Beer Butt plump, moist chicken and I chose to mix the Traditional Red and Kansas City BBQ sauces for my perfectly smoked, tender, come off the bone baby back ribs. The NC Vinegar BBQ sauce was perfect with the cooked all night, Boston butt pulled pork. Low Country Mustard BBQ sauce, Traditional Red BBQ sauce, Kansas City BBQ sauce and NC Vinegar BBQ sauce are all brought to the table for you to use individually and maybe even mix and match just a bit. This is not an easy task and since it was a carefree Sunday afternoon I chose all 4. fried green tomatoes, deviled eggs, sweet potato tots, fried asparagus and oh yes, a side of the day! Check out these options…baked beans with smoked beef brisket, coleslaw, thin sliced onion rings, fried okra, mac n cheese, collards, squash casserole (baked in its own ramekin to create all of the crispy edges), garlic mashed potatoes, skin on fries, fresh seasonal fruit, sauteed mixed vegetables, fried grit cakes, spinach casserole, potato salad, loaded potato cake, sugar snap peas. Well, the meats are extraordinary but so are the sides and I keep telling myself that the next time I go I am only having sides. You might be wondering why I haven’t mentioned the meats. My husband had the spinach casserole, fried green tomatoes and his own loaded potato cake. I had collards, the most incredible squash casserole on the planet and a loaded potato cake. This plate above has an extra side and so did my husband’s because we both wanted all of the sides.

Well, after we ate all that we could we had enough for him for 3 or 4 full meals. The plan was to take him part of everything on our plates for dinner. My extremely healthy 90 year old father in law lives with us and I knew that this was his kind of food. We both ordered the 3 combo plate with a plan. If it looks like a lot of food rest assured it is a lot of food. This 3 combo plate above is the reason that I couldn’t wait to get my husband to Smoke on the Water. However, all was well because mine was just the way I like it. Others ate their cornbread with a fork, some picked theirs up and bit through the whole piece like a pastry and some did use the dreaded knife to cut open their cornbread. I like mine opened gently and laid side by side providing the maximum surface area for butter. I have always known it was a quirk but until watching guests at Smoke on the Water with their cornbread I didn’t realize there were so many bread quirks. I was very excited when my husband picked up his fork and gently inserted it into the side of this perfectly prepared corn bread without deflating it at all. All of this means that I prefer that my breads such as rolls, corn bread or biscuits be opened gently and certainly not sawed open with a knife. Not only do I love the airy, fluffy, poofy texture I also respect the efforts of the baker. If it is supposed to be light and fluffy I want it light and fluffy. It really doesn’t matter what kind of bread…loaf bread, cornbread, dinner rolls, garlic bread, tortillas, naan, biscuits, flat bread, etc. My most highly ranked food preference is anything and everything that can be classified as bread. Now, I am not a picky eater in any way but I do have some food preferences and maybe some quirks. firm yet light and as crumbly as you are imagining. We started with Smoke on the Water’s customary cornbread service. Meaning you could choose from Starters, Soups and Salads, Burgers and finish with dessert but I have no idea how we could have gotten out of our chairs if we had any one of those. We just weren’t ever passing through at the right time or had enough time to stop. I was so excited!!! I have been working on taking my husband to try it for about 8 years. Oh yes! Traveling back from some family time in Atlanta at just the right time on a Sunday afternoon meant a visit to Smoke on the Water in downtown Greenville.
